Popcorn “Granola” Squares

Popcorn is such an expensive cinema snack, right? I disagree. Make your own popcorn at home in some delicious coconut oil and you have an amazing after dinner treat, or mid-afternoon-slump cure! The best part about making these squares is popping the popcorn of course! If you don’t have a pan with a transparent lid you’re seriously missing out! Add just a few other ingredients and you have some amazing super easy bars to take to school, work, or just to have as a delicious snack!

Ingredients:

1/3 cup unpopped popcorn (or 4 cups popped)
2 tbsp coconut oil
2-3 tbsp liquid sweetener (depending on how sweet your tooth is!)
2 tbsp almond butter
2 tbsp ground flaxseed

What to do:

  1. Pop the popcorn in a little coconut oil
  2. Mix all the ingredients in a large bowl
  3. Squash down into a regular 1lb bread tin until compact and freeze for a couple of hours, ideally overnight
  4. Slice up into squares and serve! 🙂

    These look absolutely incredible! Could you suggest an alternative to almond butter please? I’m allergic to nuts so am missing out on the wonders of al nut butters! Thanks x

      Thank you so much 🙂 of course, you could use sunflower seeds butter or otherwise tahini would work too. If you do use tahini try adding just one tablespoon to start with as it’s strong stuff!

      You can yes but you might then want to reduce the liquid (less sweetener and almond butter maybe) otherwise it won’t stick together as well 🙂

      Thank you so much! 🙂 If you don’t have any liquid sweetener then you can make your own date paste/syrup in a blender 🙂

    What is flaxseed? I here it everywhere and google isn’t too helpful…

      It’s a type of seed you should be able to find in any health food shop as it’s really popular now! You might know it as linseed otherwise? Your best bet is to go to a health food shop and just ask for it, if they know anything at all they’ll be able to help you locate it 😉 make sure you get ground flaxseed though not whole flaxseed!     is cacao butter an alternative to almond butter?

      I’m afraid I don’t think so as it’s quite different and will change the taste especially. But any other nut butter, tahini, or sunflower seed butter would be perfect! If you’re not sure and have none of the alternative please try it and let me know if it works 🙂

    I love this !! As soon as I saw this I had to make it ! But unfortunately I didn’t have flaxseeds or liquid sweetener but instead I used maple syrup 🙂 it worked out great:) my whole family loves it and I will be making it quite often 🙂 thank you very much !!
