Chocolate Waffles

I don’t know why it took me so long to actually start making waffles after I received my waffle maker. I think I was a little concerned about cheating on the wonder that is pancakes! However, I am now converted, and my Pancake Sunday has now become Waffle Wednesday (and Sunday). Waffles are so much quicker and easier to make than pancakes, and I only need one waffle to keep me full and happy! I have the Sage No-Mess Waffle Maker and it works like a dream.

I’ve started with a basic chocolate waffle recipe because who doesn’t like chocolate for breakfast?! I also wanted to create a waffle recipe where the waffles themselves actually taste good, and not just because of the massive dollop of nut butter and drizzle of syrup. So here it is, enjoy!

Makes 2 waffles – either for 2 people, or make one now and save one for another day!

Ingredients:

100g plain flour (I can’t say for sure that gf flour will work the same)
1 tsp baking powder
1/4 tsp baking soda
2 heaped tbsp cacao/cocoa powder
3 tbsp coconut sugar or 2 tbsp powdered stevia (based on the one where each tsp is equivalent to 1/3 tsp sugar)
1 tbsp cinnamon
Pinch of salt
1 flax egg (1 tbsp flaxseed + 2 tbsp water) & 2 tbsp aquafaba (chickpea water), or use 2 flax eggs
4 tbsp plant mylk

What to do:

  • Make your flax egg and mix it with the aquafaba, or just make 2 flax eggs
  • Mix together the dry ingredients in a bowl
  • When the egg replacers are ready, add them along with the milk and stir until just incorporated
  • If you have the Sage waffle maker, I recommend setting 2
  • Pour in around half the mixture into your waffle maker, or however much you judge to be right for your waffle maker, plus a little extra
  • When it’s ready (mine beeps!) simply repeat with the rest of the mixture
  • Top with nut butter, syrup, and berries!

    These look perfect! I absolutely love the shape of your pancakes! I have gluten free flour that works just like normal flour, doesn’t make any difference at all so I might try these out as soon as I get myself a waffle maker.
