Coconut Porridge with Spiced Poached Pear

Normally I always have zoats for breakfast, but sometimes (especially after a big workout) I want a nice big bowl of oats! This recipe was inspired by a cafe I visited in Melbourne which had the most delicious breakfast options, including poached pear in a bowl of oats. I thought it looked so beautiful and sounded so delicious I had to make my own version.

If you want the porridge to be beautifully snowy white sweeteners such as coconut syrup or coconut sugar won’t work as they’re too dark. That’s why I use stevia in this case due to it’s lack of colour.

I haven’t posted a porridge recipe in ages as normally I feel they’re too simple to be written up as recipes, but this one is a bit more special and required a bit more effort. It’s worth it though!

Serves: 2

Ingredients:

100g oats
500mL coconut milk
4 tbsp dessicated coconut
2 tsp stevia
2 pears
500mL water
200mL coconut syrup (or other liquid sweetener)
1 cinnamon stick
1 star anise
A few drops of vanilla essence (or a vanilla pod if you have one)
Fresh fruit to serve

What to do:

  • Place the water, syrup, cinnamon, star anise, and vanilla in a small pot and heat gently
  • Peel the pears, leaving the stalk intact and place them in the pot, making sure they are covered
  • In a separate pot, add the oats, coconut milk, dessicated coconut, and stevia, and gently simmer down to a thick porridge
  • When the pears are ready (about 15 minutes), place each pear in a bowl. Gently holding them upright by the stalk, spoon the porridge around the pear so it supports itself
  • Top with fresh fruit and enjoy!
