Chocolate and Walnut Fudge

Fudge is one of those sweet  treats I remember always buying at country fairs when I was younger. There were always so many different flavours: vanilla, coconut, rum and raisin… but my favourite was always the chocolate fudge. After not having any for ages I finally decided to make my own, and to add some walnuts for an added crunch. And I’m so so glad I did, this fudge is so creamy, so rich, so decadent, and full of flavour. Everyone loves these, even the most picky fussy eater I’ve ever known is a fan!

Makes: approximately 10cm x 15cm x 1cm thick fudge

Ingredients:

8 tbsp coconut oil, melted
4 tbsp almond butter
8 tbsp rice malt syrup (or other liquid sweetener, use date syrup to keep it really raw)
8 tbsp cacao powder
1 tsp vanilla extract
A pinch of sea salt
3/4 cup walnuts, chopped

What to do:

  1. Blend together the coconut oil, almond butter, and rice malt syrup until smooth
  2. Pour into a bowl
  3. Add the raw cacao, vanilla extract, and sea salt, and mix thoroughly
  4. Taste and adjust the seasoning
  5. Stir in the walnuts
  6. Pour into a 15cmx10cm container (or similar size) and sprinkle some walnuts on top
  7. Freeze for 1-2 hours until solid then chop up into squares and serve

It should easily last up to a month in the freezer, but try not to thaw and refreeze more than once or twice or it’ll decrease in quality!
